What it is

Almond Extract is drawn from the kernel of the sweet almond, Prunus dulcis, the same tree that gives us sweet almond oil. Where the oil is pressed straight from the kernel, the extract captures a different, lighter side of the almond — thin, water-soluble, and free of the richness an oil brings.

It’s worth thinking of it as a different ingredient from almond oil rather than a stronger version of it — the two bring different things to a finished product.

Where it comes from and how it’s made

Sweet almonds are grown widely across Mediterranean climates, with California and southern Europe among the largest sources. To make the extract, almond kernels are steeped so their soluble compounds draw out into a liquid, which is then filtered to leave the clear extract behind.
